Asparagus
Different Types
There are two types of asparagus plants—the type that produces the spears we eat and the type called “asparagus fern,” which is not eaten but used in decorative floral arrangements.
Edible asparagus is available in three colors—green, purple, and white. The green variety is the most common in the United States. Occasionally, supermarkets in the U.S. carry the purple and white varieties.
