Celery
History

Celery has been around for almost 3,000 years. This vegetable was first grown in the Mediterranean countries where the ancient Greeks and Romans used it as a medicine, but not as food. It wasn’t until 1623 when celery was first eaten as a food.
While it’s not known when celery was first brought to America, records from 1806 listed four varieties grown in the United States. In 1874, green-colored Pascal celery was first grown in Kalamazoo, Michigan. Ever since then, celery has been grown commercially in the US.
